So this is my Alexander McQueen wish list for Fall ! first off Fall is my favorite time of year the kids start back at school. The weather changes to a crisp morning and signs of scarfs & boots are all over the place ! don't get me wrong i love summer and all that comes with like BBQ's, Swimming, Fireworks and Smores ! But by this time every year I'm so ready for the kids to back in school and i can get back to my routine. And with school starting & Fall almost upon us brings school shopping for the kids & me ! (lol) no I'm not in school but i love to shop ! So this brings me to my wish list Of Alexander McQueen's Fall must haves or at least mine anyways ! This Leopard pony knuckle box clutch is going to haunt me forever i love anything Leopard and it looks so (Bad Ass) urban glam but so expensive $ 2,095.00 so i am pretty sure this item is very wishful thinking :( but i can dream.

Great Summer Salad

So last night i made this awesome salad that i order all the time at the Nordstrom Cafe and i didn't even realize that i had the recipe at home in my Bobby flay cookbook "Grill It" and it came out pretty great too the whole family loved and that's always a plus.

Ingredients
Salad:
Kosher salt
4 ounces fresh wax beans
4 ounces fresh green beans
1 pound fingerling potatoes
2 tablespoons olive oil
Freshly ground black pepper
1/2 pound red and yellow grape or cherry tomatoes, halved
1 medium red onion, thinly sliced
2 tablespoons coarsely chopped fresh basil leaves
2 tablespoons coarsely chopped fresh flat-leaf parsley
Ingredients
Nicoise vinaigrette, recipe follows
Spice-Rubbed Shrimp:
4 teaspoons ground fennel seed
1 1/2 teaspoons dry mustard
1 1/2 teaspoons ground coriander
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 pound jumbo (21 to 25 count) shrimp, shelled and deveined
1/4 cup olive oil
Fill a large bowl halfway with ice water and set aside.

Bring a medium pot of salted cold water to a boil. Add the yellow and green beans and cook for 3 to 4 minutes, or until just crisp-tender. Drain and immediately plunge into the ice water to stop the cooking. Let sit in the ice water for a few minutes, and then drain well.

Meanwhile, put the potatoes in a medium saucepan, cover with salted cold water, and bring to a boil. Lower the heat and simmer until the potatoes are almost cooked through (a knife or skewer inserted into the center should meet just a little resistance), 8 to 10 minutes. Drain well and let cool slightly.

Heat your grill to high.

Once cool enough to handle, slice the potatoes lengthwise, brush with 2 tablespoons of the olive oil, and season with salt and pepper. Place on the grill, cut side down, and cook until golden brown, 2 to 3 minutes. Turn over and grill until just cooked through, 1 to 2 minutes longer. Keep the grill on.

Combine the cooked beans, grilled potatoes, tomatoes, onion, basil and parsley in a large bowl. Ad the vinaigrette and gently toss to combine. Season with salt and pepper. Cover and let sit at room temperature while you prepare the shrimp.

To make the spice rub, combine the fennel, mustard and coriander with the salt and pepper in a bowl.

Put the shrimp in a large bowl and toss with the spice rub until evenly coated. Add the 1/4 cup olive oil and toss to coat. Place the shrimp on the grates of the grill in an even layer and grill until golden brown and slightly charred, 1 1/2 to 2 minutes. Turn the shrimp over and continue grilling until just cooked through, 45 seconds to 1 minute longer.

Arrange the salad on 4 large plates and top with the shrimp.

Nicoise Vinaigrette:
1/4 cup wine vinegar
2 teaspoons Dijon mustard
1 teaspoon honey
1 clove garlic, finely chopped
1 tablespoon anchovy paste
Kosher salt and freshly ground black pepper
1/2 cup extra-virgin olive oil
Whisk together the vinegar, mustard, honey, garlic and anchovy paste and season with salt and pepper. Slowly whisk in the olive oil.

Bang Bang Chicken & Shrimp Curry

Curry Sauce
4 teaspoons chili oil
1 whole onion minced
3 tablespoons minced garlic cloves
2 teaspoons ginger
1to 2 cup chicken broth
1 1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
3 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon ground black pepper
3 Tblsp turmeric
3 cups coconut milk
2 medium carrots, julienned
1 small zucchini, julienned
3/4 Cup of sliced grapes either color

Peanut Sauce
1/4 cup creamy peanut butter
2 tablespoons water
4 teaspoons sugar
1 tablespoon soy sauce
1 teaspoon rice vinegar
1 teaspoon lime juice
1/2 teaspoon chili oil

I cooked the chicken & shrimp in a pan with alittle bit of oil but not togther then set aside while i made the curry sauce & peanut sauce. when sauces are all done i mixed in the peanut sauce then i added the veggies & grapes and at this point i added the corn starch to thinking it up. using the rest of the chicken broth just in case it's neede at this point you dont want it to thick.
2 chicken breast fillets
16 large raw shrimp, shelled
1/4 cup cornstarch
1/2 cup vegetable oil
4 cups cooked white rice ~ put the curry over the rice and add the garnish i toasted the coconut for 20 minutes in a 350 degree over.

Garnish
1 1/2 cups flaked coconut
1/2 teaspoon dried parsley, crumbled
2 tablespoons peanuts
2 green onions, julienned

So introducing the newest member of our family "Jackson Bolt'' we have been waiting for him since the day he was born ! Well actually 2 weeks before we put a deposit on the litter before they were born these pups go so fast ! Jackson was born on a 12.5 Acre mini ranch about 2 hours away from us so at 5 weeks old we were able to go pick out our dog and get to know him and the breeder then at 8 weeks which was yesterday we got to bring him home. We became fast friends with the breeders they are the most friendly down to earth people who love their dogs ! if anybody is interested in a West Highland White Terrier just let me know and i can give you all the info their pups are delivered everywhere in U.S. ! and yes the kind from the dog food .

So i picked this Mag up the other day since I'm trying to eat much healthier & i love to cook so I'm always on the hunt for a low cal recipe so anyways i am slightly addicted to magazines too i buy 2 to 3 a week ! OK moving on to this great salad dressing i made last night ! Spinach with Garlic Vinaigrette.

Yield: 4 servings (serving size: 1 3/4 cups)

Ingredients
1 1/2 tablespoons extra-virgin olive oil
1 tablespoon white wine vinegar
1/2 teaspoon Dijon mustard
1/4 teaspoon freshly ground black pepper
1/8 teaspoon salt
2 garlic cloves, minced
6 cups baby spinach leaves (about 6 ounces)
1/4 cup vertically sliced red onion
Preparation
1. Combine the first 6 ingredients in a large bowl, stirring well with a whisk. Add 6 cups spinach and red onion; toss to coat.

So last night i made this dressing and i cant stop thinking about it lol ! i might have to have it for lunch ! very easy & fresh !

Sweet Potato & Kale Soup

Sweet Potato & Kale Soup

inspired by Food and Wine

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, chopped fine

2 teaspoons fresh ginger, chopped fine

3/4 teaspoon turmeric

1/4 teaspoon crushed red peppers

3/4 pound kale, tough stems removed and roughly chopped

1 1/2 pounds sweet potatoes (yams), peeled and diced into 3/4-inch cubes

1 1/2 quart chicken or vegetable broth

1 teaspoon salt

fresh ground pepper, to taste

1 cup canned unsweetened coconut milk

2 cups cooked brown rice

In a large saucepan, heat the olive oil over medium heat. Add the onions and cook down until tender and translucent, about five minutes. Add the garlic, ginger, turmeric and crushed red pepper flakes. Cook, stirring, for about 1 minutes.

Add the sweet potato chunks and stir.

Add the chicken or vegetable broth and bring to a simmer.

Add the kale once the broth is simmering and submerge all of the leaves, helping them to cook down.

Cook for about 20 minutes, or until the sweet potatoes have become tender.

Add salt and pepper to taste.

Lastly, stir in coconut milk, heat through and serve over a bed of brown rice

This is the first time i made this wonderful soup and my family loved it !

Paula Deen's Layered Cranberry Sauce

Ingredients

1 8-ounce package cream cheese, at room temperature
2 tablespoons mayonnaise
1/2 cup chopped pecans, plus more for topping (optional)
1 16-ounce can jellied cranberry sauce

Directions

Beat the cream cheese and mayonnaise in a bowl with a mixer until creamy (it should be spreadable). Beat in the pecans.

Put the cranberry sauce in a bowl and mash with the back of a fork.

Spread about half of the mashed cranberry sauce in the bottom of a bowl or parfait dish. Spread the cream cheese mixture on top of the cranberry sauce, then gently cover with the remaining cranberry sauce. Top with more pecans, if desired

This is a family recipe that's been around forever i make it only on Thanksgiving and thought i'd share with you all enjoy !

3 Cans peas
1 can of evaporated milk
Wonder flour in a can
1/2 stick of butter
Salt & Pepper

in a sauce pan heat butter add alittle milk at a time when warm start adding the flour and wisking the whole time adding more milk ( you do end up almost using the whole can ) and flour you want it to be like a thick soup but not to thick add salt & pepper to taste when all done add drained cans of peas

So on Sunday we headed to Yucaipa to a little town called Oak Glen to go apple picking and i found this one orchard Los Rios Rancho where u can pick your own so i thought why not the kids will have a great time and they did !

My dirty boots ! So glad i wore them tho there was big red ants and dirt everywhere ugh !

And after a morning of apple picking we headed into town for some shopping & lunch !

So here are our pickings we picked around 25 lbs of apples for $30.00 these are all organic apples they also have pumpkins & u pick raspberries too ! The kids had a great time up in the mountains for the day and now i get to make applesauce & apple pies too !

Tomorrow in October 1st and in my house that means alot ! you see We have 3 October birthdays in our family which one is mine ! and the others are my 2 daughters so we take Halloween pretty serious around here my house has already been decorated for about 2 weeks now except the outside didn't want to freak the neighborhood out yet ! We use to do a Haunted House for about 5 years! It was great we had fog machines, scary music, dead bodies, zombies and large size candy bars ! I have been passing out the large size for the last ten years kids come to expect them now lol ! The last time we did a Haunted House i was prego with my son Reese who is now 6 ! We stopped doing them when he was born it was just so much work we always had around 20 kids & adults running it and it was a blast but my older son Ryan & his friends did a great job we had the whole neighborhood hanging out here on Halloween and it really became a big thing ! But with the birth of my younger son i didn't want to get him to freaked out over Halloween so we stopped doing it maybe when he's 10 we will have to bring it back ! But until then i really do up the house from the living room to the kitchen & den and even the back yard too ! The kids really love it i will have to post pic's when i get around to it ! But until then here are some really spooky fun things that would great in anybodies house & get you in the mood for Halloween. Enjoy !

This is not the first time i made this burger but it is the first time i added pickled jalapenos to it and boy was it good ! so here's what you'll need

Fresh Zucchini from the Birch St. Farmers market

chopped it up and saute with some real butter

Fresh corn

Roasted Potatoes & onions 30 minutes

i did add to the veggies some mushroom & bell peppers and topped it with the boneless pork !

and drizzled the Chipotle honey glaze. Enjoy

ok first off this recipe is for about for 8 to 10 servings so if you need to cut it in half or you can save some for later !

5 Chipotle chili's from the can
10 Garlic cloves or more i love Garlic
1 tbls of crushed chili flakes
1/2 cup paked brown sugar
1/2 cup honey
1/2 cup warm water add slowly to food processor
and pepper !
add to the food processor blend well i use this to go over boneless pork meat that i browned then place in the crockpot recipe to follow when im done cooking it later so i can post a pic with it !

Concert Under The Stars

My grandson Landen and his preschool class performed at the Concert Under the Star for our city's 50th anniversary ! he was such a little ham too ! singing his heart out. The concert our city puts on are really neat they are every week durning the summer with different themes each week. So i pack up some dinner and off to the park we went to listen to some good music.

If ever in Las Vegas or San Diego here's a place to try if your hungry !! Me & my husband were in Vegas recently and try ed The Hash House a Go Go at the Imperial Palace Vegas has 2 locations but since we were staying on the strip we went there ! And it did not disappoint the food was great and the portions were huge i love there motto Twisted Farm Food !!

Kam got the house favorite Andy's sage fried chicken with maple reduction, 2 eggs bacon mashed potatoes & biscuit ! it was huge and tasted so good.

My plate was The Sage fried chicken stacked with there famous bacon waffles with hot maple caramel reduction and crowned with fried leeks ! I've never had anything like this and boy was it tasty !

-a layer of mashed potatoes

-biscuit
-sprinkle of fresh spinach
-a thick layer of smoked bacon
-fried chicken breast
-scrambled eggs
-a griddle melted mozzarella
-waterfall of cream chipotle sauce
-tomatoes here and there

Soul Mates ??

Did you ever wonder if you married your soul mate ?? And really do you get more than one ? who really knows maybe our hearts do ! Do you remember way back in high school being in love (puppy love) thinking this is the one ! I sure do i married my high school sweetheart we had 3 kids and were together for over 15 years but we grew up and grew apart and yes we did Divorced.... Well I'm not sure how many times one person can fall in love but i was reading the Elizabeth Taylor story and she seemed to have many loves and be in real love with all of them 7 husbands and 8 marriages WOW huh ? She even married one twice ! And although this sounds odd marrying someone twice its not that odd to me my parents married each other twice strange huh ? Well they get a A for effort but the second marriage didn't stick either so when i was 15 they called it quits for good. And they divorced each other twice ! But both are remarried again and are happy.
So anyways back to Liz & Richard I've been a little obsessed with her and her whole love life and the Vanity Fair article with revealing never before seen love letters from Richard Burton. Here are a few ~

Well i think i married my one real first Love ~ we were crazy in love and so young and no one could tell us any different but what did we know we were in high school but we did get married and have a happy little family 3 great kids came out of that and although it ended bad and i mean BAD ! I wouldn't change it for the world we had way more good times than bad and alot of good memories that i always will cherish forever !

This month's issue of Vanity Fair has Liz taylor on the cover with some pretty steamy love letters from her romance & marriage to Richard Burton. They were married March 15, 1964. It was her fifth at young age of 32 ! I love old Hollywood and anything that it has to offer in way of a good read and a perfect black & white movie and anything romantic and this couple oozed Love, Lust, Tempestuous romance. Sounds good to me i am currently reading Elizabeth By J.Randy Taraborrelli.

There are many stories as to its actual beginnings, with over two dozen cities and towns laying claim to being the birthplace of Memorial Day ! So here's a big thank you to all the men & women who protect our counrty !

Now what will you be doing this weekend ? I'd love to be with the SATC 2 girls in Abu Dhabi,

haha i wish. Seen the movie last night with my girls and it was a bit long but that was ok i needed my fill of my SATC girls its been 2 years since the last movie and i was missing my Mr. Big & Carrie and the girls. Thats a different post that i will do it over the weekend.

But this is what i will be doing !

and hopefully a little of this too!

Car shopping ! We went last weekend and looked at the Buick Lacrosse ( but in black with a black leather interior) and i really do love it but it was'nt my first choice until we drove it ! But we told ourselves we are going to check out all the cars (i) we wanted to look at ! so this weekend we will be looking at the Caddy dealer i have my eye on this baby

This is what i drive right now not that much different i know but its just time for something new and no this is not our family car i have a SUV that i love and i tote the kids around in when need be. But anywho thats a little of what my weekend will consist of.

My Mother's day weekend !

So on Saturday me & the hubby and our son Reese spent the day in Laguna ! We started off with lunch at Las Brisas we have been there a few times brunch but never just for lunch so it was fun we sipped on Bloody Mary's and i had some fresh Mango Chevice then we headed down to the beach !

when we headed out from the beach i talked Kam in to stopping at Fashion Island to see the New Nordstrom and yes i fell in love i didn't get anything for me since i knew gifts were coming my way with Mother's Day on Sunday so i picked up some things for Reese

My older kids & hubby are so funny they couldn't even wait till Sunday to give me my gifts so on Saturday i had walked in to the den to see flowers cards and so many cool things i am truly blessed not just cause i got so many things but because they all spent there time on me the cards alone are tear jerkier ! gee sh then my niece's card is way tear jerkier too ! My husband surprised with with a membership to the tanning salon i have been wanting but never went and signed up since the one i use to belong to closed down over a year ago so he did it for me and put it my card !

So i finally got my Diane Von furstenberg Sunnies "Love Knot" and they came with this really cute summer tote and it's perfect for the beach !

So this pass weekend i hit the mall a little store called "Cutiesgirl" was having a sandals sale buy one pair get the other half price ! So now iam summer ready with my blinged out sandals just need to pick up some more flip flops.

And i also got my hair redone ! It had been around 12 weeks since my last appointment so it was time to get new hair i am totally addicted to my Bohemian Hair extensions ive been getting them off and on for the last 3 years they are sewed in and add length and fullness and at this time iam growing my hair out so this is a great way to get you through that awkwardness of growing out short hair and my hubby thinks it's really sexy !

Chipotle Caesar salad with Lump Crab Cake

Spicy dressing on a caesar salad with a crab cake what else can you ask for ! when you want something lite but with lots of flavor this is it and really easy too.

Dressing

1/2 cup Mayo

1 tsp Dijon mustard

1 tsp ground pepper

2 to 4 tsp of Worcestershire sauce

2 whole chipotle chilis from a can + 1 tsp of the juice

5 fillets of Anchovy i use the whole can minus the oil

8 Garlic cloves diced

2 to 3 tbls of oil

4 tbls of Red wine vinger

add all to blender mix until smooth !

Now for the crab cake i cheated i bought frozen from Sam's Club 5 minutes each side

Romaine Lettuce chopped

Croutons

Grated Parmesan Cheese toss together & enjoy !

At Joes Crab Shack this place never disappoints great food and an amazing view except i forgot to take a pic of the ocean (ugh) sorry this place sits right on the water with a great view too !

So on Sunday we headed out to a Angel game and took the boys they were excited they have both been before so they new what was in store a afternoon of eating whatever they wanted and a visit to the Angel store. BLT Deviled Eggs

Ingredients
6 large eggs, hard-boiled and peeled
1/4 cup mayonnaise
3 slices bacon, cooked and crumbled plus more for garnish, if desired
2 cherry tomatoes, seeded and finely chopped
1 tablespoon dried parsley flakes
Salt and freshly ground black pepper

Directions
Halve the eggs lengthwise. Remove the yolks and add them to a medium bowl. Mash the yolks with a fork and stir in the mayonnaise, bacon, tomatoes, and parsley. Add salt and pepper, to taste, and blend well.

Fill the egg whites evenly with the yolk mixture and garnish with bacon, if desired. Arrange them in a container and store, covered, in the refrigerator until ready to serve.
