Chicken Pozole

Yummy chicken pozole i've made this for years and all my kids love it ! They always want it when there is a chill in the air .

Really simple soup !! For a large pot of Chicken Pozole you'll need

6 Skinless boneless Chicken breast ~ boil until cooked then shredded and add back to the chicken broth
1 Large can of Hominy~ drain the wash and add to the chicken broth
then i add 3 different Chiles , California, New mexico and Paprika to taste
and for extra flavor i add 4 cubes of chicken bullion
dont forget the salt & pepper ! Simmer together for about an hour before serving then garnish with

Shredded cabbage
Chopped Cilantro
Diced Radish
And enjoy !

Chocolate Ganache over the top of homemade Buttercream frosting !

Me & my daughter Britt love to cook and bake and we found this recipe in one of our Halloween books and thought we'd make it for the family !! it was pretty easy we just used box cake mix made 3 layers and then Britt made a batch of Buttercream frosting and added food coloring to make it Orange and then i made the Ganache just bakers chocolate chopped up and some heavy whipping cream !!

Peanut Brittle Cookies !!

Ingredients
1/2 cup butter, softened
1/4 cup shortening
1 cup packed dark brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 egg
1 teaspoon vanilla
1-1/4 cups all-purpose flour
1-1/4 cups quick-cooking rolled oats
4 ounces bittersweet or semisweet chocolate, chopped
1 cup crushed peanut brittle
Directions
1. Line 2 cookie sheets with foil and grease the foil; set aside.

2. In a large mixing bowl beat butter and shortening with an electric mixer on medium to high speed for 30 seconds. Add brown sugar, baking powder, and baking soda. Beat until combined, scraping sides of bowl occasionally. Beat in egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. Stir in the rolled oats, chopped chocolate, and 1/2 cup of the crushed peanut brittle.

3. Drop dough by rounded teaspoon 2 inches apart onto the prepared cookie sheets. Flatten each mound slightly.

4. Bake in a 350 degree F oven for 8 minutes. Remove cookie sheet from oven. Sprinkle with remaining 1/2 cup crushed peanut brittle, carefully pressing in slightly. Bake for 4 to 5 minutes longer or until edges are lightly browned. Cool on cookie sheet for 2 minutes. Transfer cookies to a wire rack; cool. Makes about 24 cookies.

Loving our Disneyland passes

There is nothing like Disneyland in the Fall !! From all the decorations to the warm feeling you get walking down main street seeing all the happy family's enojying the most happiest place on earth !! We are lucky enough to only live 20 minutes away from Disneyland and we have been pass holders for the last 6 years !! My son Reese loves Disneyland and it's like his first time everytime we go he just enjoys it that much and so do me and my hubby!!

Soccer time for Reese ! This is his first year playing Soccer and he loves it at this point in the game it is great to watch the kids all over the field running for the ball going the wrong way making gold and just having fun !!!
