So i picked this Mag up the other day since I'm trying to eat much healthier & i love to cook so I'm always on the hunt for a low cal recipe so anyways i am slightly addicted to magazines too i buy 2 to 3 a week ! OK moving on to this great salad dressing i made last night ! Spinach with Garlic Vinaigrette.
Yield: 4 servings (serving size: 1 3/4 cups)
1 1/2 tablespoons extra-virgin olive oil
1 tablespoon white wine vinegar
1/2 teaspoon Dijon mustard
1/4 teaspoon freshly ground black pepper
1/8 teaspoon salt
2 garlic cloves, minced
6 cups baby spinach leaves (about 6 ounces)
1/4 cup vertically sliced red onion
1. Combine the first 6 ingredients in a large bowl, stirring well with a whisk. Add 6 cups spinach and red onion; toss to coat.
So last night i made this dressing and i cant stop thinking about it lol ! i might have to have it for lunch ! very easy & fresh !
