Open Faced Pork-Tacos ...Yummy


1.Open faced pork tacos with a plantain puree Bake time 45 min severs 4
Preheat the oven to 350. Cut pork into 2-inch pieces place in a large dutch oven pan with a little oil salt & pepper over high heat. Brown the meat then add half the orange juice and all of the orange peel ! Transfer to over bake 45 minutes.

2.Meanwhile in a large skillet, Heat some oil over a medium heat add onion and cook stirring until softened 5 to 7 minutes add tomatoes and their juices the chipotles and the adobe sauce and cook until the mixture forms a thick paste about 10 minutes.

3.Place the Plantains cut side down in a baking dish. Add the remaining orange juice, transfer to oven bake until tender. about 15 minutes. Peel and discard the skin. Using a food processor puree the plantains with their cooking liquid season with salt & pepper.

4. Shred the pork and return the meat to the cooking liquid and stir in the tomato mixture !Serve with corn tortillas spread the plantain puree on the tortillas and top with pork and cut up avocados !
4 center cut pork loins
2 TB vegetable oil
juice of 6 oranges plus grated peel of one orange
1 sweet onion thinly sliced
2 canned chipotle Chile's in adobe sauce
2 ripe plantains
2 avocados cut into cubes
Corn tortillas
