So this is a pretty awesome soup ! If you love Spicy & Shrimp try this. and it's really easy to make!
4 Cups of chicken broth
2 Teaspoons Chile-garlic sauce or sri racha
1 celery sliced thin
1 medium carrot peeled and sliced thin
4 inch lemongrass, Thinly sliced
2 Tablespoons of fish sauce
2 Teaspoons of sugar
1 pound of shrimp
2 Cups of rice already cooked
Fresh lemon juice about 4 TB
1/2 Cup coarsely chopped cilantro leaves only !
Basically add everything to a big soup pot on medium except the rice and shrimp & Lemongrass and cilantro ! Cook for about 5 to 10 minutes then stir in rice and shrimp until shrimp are pink about 2 to 3 minutes then remove from heat add lemongrass and top with the cilantro ! and enjoy !
